About the experience

What you will make

This is a dining experience you cook yourself, three courses built around Australian native ingredients, with the fire doing the talking.

You start with a native brie, melted over the fire and finished with native flavours – the kind of starter that stops conversation for a minute. Then the main: kangaroo, cooked over the coals and served with a wattleseed and pepperberry sauce. You learn how to handle kangaroo properly – it is lean, it is quick, and cooked right it is superb.

Dessert is a lemon myrtle tiramisu – the Italian classic rebuilt with one of Australia’s great citrus flavours. You assemble it in class and it is on the table by the time the fire dies down.

Along the way you learn where these ingredients come from, how they are sourced, and how to use wattleseed, pepperberry and lemon myrtle in your own kitchen. Everything you cook, you eat, course by course at the long table.

What is on the menu?

Do we cook it ourselves?

Yes. This is a hands-on experience. You cook every course, with guidance, and eat every course on the day at the long table.

What if I have never cooked kangaroo?

Most guests haven’t, and that is the point. Kangaroo is lean and cooks quickly, and you learn exactly how to handle it so it comes off the fire superb. If kangaroo is not for you, let us know when you book and we will talk through options.

Where do the native ingredients come from?

Our native ingredients are sustainably sourced, and part of the experience is learning where wattleseed, pepperberry and lemon myrtle come from and how to use them in your own kitchen.

Where does the Native Dining Experience run?
