Ingredients
- 250 grams potatoes mashed
- 100 grams Havarti cheese grated
- 100 grams corn kernels
- 1 onion finely sliced
- 100 grams pancetta diced
- 1/2 cup flour
- Pepper to taste
- 2 teaspoons salt
- 1/2 tablespoon smoky paprika
- 1 cup breadcrumbs
- 2 egg beaten
- Cooking spray oil
Instructions
- Cook the potatoes in boiling water until tender, then mash them until smooth. Mix the 1/2 cup flour through the potatoes and set aside to cool.
- Preheat your air fryer to 180°C (350°F). Lightly spray the air fryer basket with cooking spray. In a bowl, toss the finely sliced onion and diced pancetta with a little cooking spray oil. Place the mixture in the air fryer and cook for 8 minutes, shaking the tray a few times during cooking to ensure even frying. Once done, set aside to cool.
- In a large bowl, combine the mashed potatoes, grated Havarti cheese, corn kernels, smoky paprika, salt, pepper, and the air-fried onion and pancetta. Mix well until all ingredients are evenly distributed.
- Take small portions of the mixture and shape them into oval or cylindrical croquettes.
- Roll each croquette in gently in breadcrumbs then dip in the beaten egg, and coat with breadcrumbs again. You may find you need to rest after the first coat of breadcrumbs.
- Preheat your air fryer to 200°C (390°F). Lightly spray the air fryer basket with cooking spray and arrange the croquettes in a single layer, ensuring they do not touch each other. Lightly spray the croquettes with cooking spray to help them crisp up. Air fry for about 10 minutes, or until golden brown and crispy, shaking the basket halfway through to ensure even cooking.
- Remove the croquettes from the air fryer and let them cool slightly before serving. Enjoy your Potato, Cheese & Corn Croquettes hot, with your favourite dipping sauce.
