These sensational corn ribs are great for a meat free Monday or when catering for vegetarians. They are super simple and super tasty!

Corn Ribs
Such a fun simple dish. Great for the vegetarian or vegan in the family!
Ingredients
- 4 Corn Cobs
- 1 tbsp Olive Oil
- 2 tsp Hot Paprika
- 1 tsp Onion Powder
- 1 tsp Garlic Powder
White BBQ Sauce
- 250 mls Mayonnaise (see my homemade recipe)
- 50 mls Sour Cream
- 20 mls Apple Cider Vinegar
- 1 tbsp Brown Sugar
- 2 tsp Djion Mustard
- 1 tsp Lemon Juice
- 1/2 tsp Salt
- 1/2 tsp Cayenne Pepper
- 1-2 tsp Horseradish
Instructions
- Mix the oil and spices together
- Cut your corn using great care and a very sharp knife longwise in quarters. I placed the flat end on the board and carefully cut in half before lying on the board and cutting in half again.
- Baste the corn with the oil and spices
- Place in a 180 Degree oven for 30 minutes or until nicely curled and slightly caramelised on the edges.
White BBQ Sauce
- Whisk all the ingredients in a bowl until smooth and set aside in fridge to serve.
