Cut your corn using great care and a very sharp knife longwise in quarters. I placed the flat end on the board and carefully cut in half before lying on the board and cutting in half again.
Baste the corn with the oil and spices
Place in a 180 Degree oven for 30 minutes or until nicely curled and slightly caramelised on the edges.

Whisk all the ingredients in a bowl until smooth and set aside in fridge to serve.
