Corn Ribs

These sensational corn ribs are great for a meat free Monday or when catering for vegetarians. They are super simple and super tasty!

Ingredients
  

  • 4 Corn Cobs
  • 1 tbsp Olive Oil
  • 2 tsp Hot Paprika
  • 1 tsp Onion Powder
  • 1 tsp Garlic Powder

White BBQ Sauce

  • 250 mls Mayonnaise (see my homemade recipe)
  • 50 mls Sour Cream
  • 20 mls Apple Cider Vinegar
  • 1 tbsp Brown Sugar
  • 2 tsp Djion Mustard
  • 1 tsp Lemon Juice
  • 1/2 tsp Salt
  • 1/2 tsp Cayenne Pepper
  • 1-2 tsp Horseradish

Instructions
 

  • Mix the oil and spices together
  • Cut your corn using great care and a very sharp knife longwise in quarters. I placed the flat end on the board and carefully cut in half before lying on the board and cutting in half again.
  • Baste the corn with the oil and spices
  • Place in a 180 Degree oven for 30 minutes or until nicely curled and slightly caramelised on the edges.

White BBQ Sauce

  • Whisk all the ingredients in a bowl until smooth and set aside in fridge to serve.
