Ingredients
  

  • 500 grams grated beetroot
  • 1 cup brown sugar
  • 1 cup pineapple or orange juice
  • 1/3 cup red wine vinegar
  • 1-2 tsp dried chili optional
  • 1 tsp salt
  • 1 tsp ground pepper
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp ground turmeric
  • 1 tsp grated ginger

Instructions
 

  • Combine grated beetroot, brown sugar, pineapple or orange juice, red wine vinegar, salt, pepper, cumin, coriander, turmeric, dried chili (if using), and grated ginger in a saucepan.
  • Stir the mixture thoroughly over medium heat until the sugar dissolves.
  • Bring the mixture to a gentle boil, then reduce the heat and simmer for 30-40 minutes or until the relish thickens, stirring occasionally.
  • Allow the relish to cool before transferring it to sterilized jars.
  • Store in the refrigerator. It can be served immediately but tastes better when left to mature for a week.
