Tangy Beetroot Relish with Spiced Kick
Ingredients
- 500 grams grated beetroot
- 1 cup brown sugar
- 1 cup pineapple or orange juice
- 1/3 cup red wine vinegar
- 1-2 tsp dried chili optional
- 1 tsp salt
- 1 tsp ground pepper
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp ground turmeric
- 1 tsp grated ginger
Instructions
- Combine grated beetroot, brown sugar, pineapple or orange juice, red wine vinegar, salt, pepper, cumin, coriander, turmeric, dried chili (if using), and grated ginger in a saucepan.
- Stir the mixture thoroughly over medium heat until the sugar dissolves.
- Bring the mixture to a gentle boil, then reduce the heat and simmer for 30-40 minutes or until the relish thickens, stirring occasionally.
- Allow the relish to cool before transferring it to sterilized jars.
- Store in the refrigerator. It can be served immediately but tastes better when left to mature for a week.
