Bang Bang Sauce

This is a great sauce to combine with your BBQ meals or Salads this summer. Top a steak or add to a burger. We use it in the Bang Bang Chicken salad. So many great uses and so summer easy to make.

Ingredients
  

  • 220 mls Coconut Milk
  • 100 mls Apple Cider Vinegar
  • 100 mls Water
  • 250 gms Smooth Peanut Butter
  • 1 tbsp Sweet Dark Soy
  • 1 tbsp Brown Sugar
  • 1 tsp Onion Powder
  • 2 tsp Lemon Rind
  • 1 tbsp Lemon Juice
  • 1 Stick Lemongrass
  • 1 tbsp Ginger
  • 3 med Red Chilli's (adjust to liking)
  • 1 tsp Ground Pepper
  • ½ tsp Salt (or to taste)

Instructions
 

  • Puree your ginger, chilli's and lemongrass in the 100mls of water.
  • Add all the ingredients to a saucepan and simmer for up to 5 minutes until thick and combined.
  • Let sauce cool slightly and then place in sterilised jars.
  • Enjoy on Bang Bang Chicken and with a nice glass of d'Arenberg Chardonnay.
