Lentil Balls

Cooked Brown Lentils

Cooked Quinoa

Instructions
Pre-heat oven to 200°C
Lentil Balls
Add half the cooked lentils and the quinoa to a food processor and puree until it is a thick grainy paste
Place in a bowl with remaining lentils
Add the tofu and olive oil to the food processor and blend until a smooth paste. Add to lentil mix.
Combine all the remaining ingredients in the bowl and combine with hands until well combined. Form into small balls and place on oven tray.
Bake for 20-25 minutes
Curry Sauce
Add the oil to a saucepan and bring to heat. Add the brown onions and cook on a low heat until translucent.
Add ginger and garlic and fry off for a minute
Now add your spices and combine for another 1 minute
Add all the remaining ingredients other than salt and tamarind paste and bring to a low simmer
simmer for 5-8 minutes and then taste before seasoning
Depending on how sweet your tomatoes were add 1-2 tsp salt and 1-2 tsp tamarind paste to balance your sauce.
Serve the meat balls with a lashing of Coconut Curry Sauce and enjoy all the superfood benefits this recipe holds.
