In a saucepan over medium heat, add the caster sugar. Shake the pan occasionally until the sugar dissolves and turns into a light caramel color, about 5-7 minutes.
Carefully add the full cream, peanut butter, vanilla extract, and sea salt to the caramel, stirring continuously until smooth and well combined.
Remove the caramel sauce from heat and set it aside to cool.
Custard Base:
In a saucepan, combine the full cream, full cream milk, and caster sugar. Warm the mixture over low heat, stirring constantly, until it reaches a low simmer. Do not boil.
Remove from heat and stir in the vanilla extract.
Gently add the whisked egg yolks to the warm milk mixture, whisking continuously.
Return the mixture to the saucepan and cook over low heat, stirring constantly, until it thickens and coats the back of a spoon, about 5-7 minutes. Do not boil.
Remove the custard base from heat and allow it to cool.
Combining Caramel and Custard:
Once both the peanut caramel sauce and custard base have cooled, gently combine them in a clean bowl.
Ice Cream Assembly:
Pour the combined mixture into an ice cream maker and churn according to the manufacturer's instructions, usually about 20-25 minutes or until it reaches a soft-serve consistency.
Transfer the churned ice cream to an airtight container.
Drizzle extra peanut caramel sauce over the ice cream.
Freeze the ice cream for at least 4 hours or until it's firm.
Scoop and enjoy this sensational salted peanut caramel ice cream!
